COMPETITIVE ANALYSIS OF THE GASTRONOMIC SECTOR IN LA COSTANERA ENCARNACENA

The general objective proposed in this research was to determine, evaluate and analyze the factors that influence the competitiveness of the gastronomic places of the so-called Gastronomic Walk of the Costanera San José in the city of Encarnación, using the competitiveness map of the Inter-American Development Bank (ADB). It was carried out because the city has had great growth and tourist developments in recent years, and where gastronomy has grown considerably with it. Therefore, knowing the factors that make these places competitive can positively impact this tourism development because currently gastronomy is an essential factor and a point of tourist, cultural and regional identification in the countries.
A quantitative approach was approached, with a field or non-experimental, cross-sectional and descriptive design. Primary data were obtained through surveys carried out to the heads and / or managers of the ten local parts of the population, in addition, data was collected regarding care, equipment and infrastructure, by observations with structured questionnaires applied institution to each local , using an instrument designed for the purpose.
The results showed that the locals of the population meet the competitiveness factors to a great extent in terms of: internal planning, commercialization and marketing, sales, accounting and finance, technology and infrastructure, having to improve the factors of: human resources, insurance of the quality and the environmental factor.
